Seafood Boil with Potatoes, Corn & Cajun Seasoning

Ingredients

  • 2 lemons - quartered
  • 1 yellow onion - large chop
  • 6 cloves of garlic - smashed
  • ½ cup old bay seasoning
  • ½ lb small red potatoes
  • 4 husks of corn - cut into 3rds
  • ½ lb clams
  • ½ lb mussels
  • 2 lobster tails
  • 1 lb crawfish
  • 1 lb shrimp
  • 1 sausage - sliced into bite size pieces
  • 1 cup seasoned cooking water
  • 3 tbsp butter
  • 2 tbsp fresh parsley- finely chopped

Directions

  1. Fill a large pot with 14 cups of water.
  2. Add 1 quartered lemon (squeeze to release the juice), chopped onion, peeled and smashed garlic cloves and old bay seasoning.
  3. Bring to a boil then add the red potatoes, cook for 8 minutes or until tender.
  4. Once cooked, take the potatoes out of the boiling water and into a large boil- set aside.
  5. Add the corn into the boiling water and cook for 4 minutes- take out and place into the bowl with potatoes.
  6. Continue this process with each of the ingredients.
  7. Cook clams and mussels for about 4 minutes, until they open up, lobster tails and crawfish for 5 minutes and shrimp for 3 minutes.
  8. Place everything in the boil.
  9. Slice the sausage into bite size pieces and fry until crisp and golden brown, place into the bowl.
  10. Reserve 1 cup of the seasoned cooking water and put into a sauce pan with butter and finely chopped parsley.
  11. Mix and simmer for 3 minutes.
  12. Pour butter sauce over all the cooked food in the bowl and mix well.
  13. Serve with remaining lemon wedges and enjoy while hot.
