Seafood Boil with Potatoes, Corn & Cajun Seasoning
Ingredients
- 2 lemons - quartered
- 1 yellow onion - large chop
- 6 cloves of garlic - smashed
- ½ cup old bay seasoning
- ½ lb small red potatoes
- 4 husks of corn - cut into 3rds
- ½ lb clams
- ½ lb mussels
- 2 lobster tails
- 1 lb crawfish
- 1 lb shrimp
- 1 sausage - sliced into bite size pieces
- 1 cup seasoned cooking water
- 3 tbsp butter
- 2 tbsp fresh parsley- finely chopped
Directions
- Fill a large pot with 14 cups of water.
- Add 1 quartered lemon (squeeze to release the juice), chopped onion, peeled and smashed garlic cloves and old bay seasoning.
- Bring to a boil then add the red potatoes, cook for 8 minutes or until tender.
- Once cooked, take the potatoes out of the boiling water and into a large boil- set aside.
- Add the corn into the boiling water and cook for 4 minutes- take out and place into the bowl with potatoes.
- Continue this process with each of the ingredients.
- Cook clams and mussels for about 4 minutes, until they open up, lobster tails and crawfish for 5 minutes and shrimp for 3 minutes.
- Place everything in the boil.
- Slice the sausage into bite size pieces and fry until crisp and golden brown, place into the bowl.
- Reserve 1 cup of the seasoned cooking water and put into a sauce pan with butter and finely chopped parsley.
- Mix and simmer for 3 minutes.
- Pour butter sauce over all the cooked food in the bowl and mix well.
- Serve with remaining lemon wedges and enjoy while hot.
