Grilled Salmon with Charred Ponzu Garlic Green Beans

Ingredients

  • 2 ½ lb pieces of salmon
  • Pinch of both salt and pepper
  • 2 tbsp dijon mustard
  • 2 tbsp grain mustard
  • 1 lb green beans
  • 2 garlic cloves- minced
  • 1 tbsp ponzu sauce

Directions

  1. Turn the oven to broil and allow to heat.
  2. Meanwhile, toss green beans with olive oil, salt and pepper and lay across a large foil lined baking sheet.
  3. Cook under the broiler for 4-5 minutes, stirring often.
  4. Once beans are tender and crispy, take them out of the oven and put them into a large mixing bowl.
  5. Add in the 2 minced garlic cloves and ponzu.
  6. Mix to combine and set aside while you cook the salmon.
  7. Preheat the oven to 375 degrees F.
  8. Rinse and pat dry salmon, season with a pinch of salt and pepper.
  9. In a small bowl mix together dijon and grain mustards and smear over the top and sides of the salmon filets.
  10. Place salmon onto a parchment lined baking sheet and cook for 10 minutes (for medium, longer for more well done).
  11. Serve with lemon slices and enjoy!
